Sweet potatoes bonbons

Yes, I’m serious! Those are bonbons made from sweet potatoes (or a pumpkin if you do not have sweet potatoes in hand). They taste … strange, but good and you can use them instead of a chocolate bonbons if you are on a diet after the holidays.

What will you need to prepare them:

250 gr. Ground almonds;
2 medium-sized sweet potato (about 400 gr.) *;
200 gr. Sugar (can be used and brown);
Grated lemon peel;
50 gr. Coconut;
* If you find the sweet potato can replace them with boiled pumpkin. The taste is almost the same.

Preparation:

You can call the children because it is very easy and they will have fun.

Potatoes are cut into pieces (okay, this part is for you) and without peel, put them to boil. When cooked, still hot, peel.
Add the remaining products and mix well.
Finally, knead the dough, and leave it in the refrigerator for several hours.
Then shape the bonbons and arrange them on a tray, covered with baking paper and bake in preheated oven at 200C/385F for about 8-10 minutes.
Leave to cool and sprinkle with powdered sugar.
