400 gr. Raisins;
100 gr. Dried apricots;
150 gr. Dried cranberries;
100 gr. Chopped Greek mandarins * (can be replaced with candied orange peels)
100 gr. Chopped walnuts;
100 gr. Sliced cashews;
Juice and zest;
tablespoons Orange juice;
100 ml. Cognac or whiskey;
1 tablespoon cinnamon;
1 tablespoon ginger;
1 tsp nutmeg;
350 gr. melted butter;
3-4 tablespoons copper;
200 gr. Brown sugar;
150 gr. White crystal sugar;
350 gr. Flour;
100 gr. Ground almonds;
1 baking powder;
½ cup melted butter for spreading on top after baking;
Method of preparation:
All Products: raisins, chopped dried apricots, tangerines, walnuts, cashews, juice and zest, orange juice, alcohol and spices are mixed together and put aside for a few hours.
Beat the softened butter with the sugar, is then add and the honey and stir.
One by one add the eggs, stirring continuously, alternating with 1 tablespoon flour.
Then stir with a spatula while adding the remaining half of the flour, almonds, baking powder, and the mixture with the raisins.
Add and the rest of the flour.
Stir until smooth mixture.
Prepare a high baking dish with a cover. Spread with butter and cover the bottom and sides with baking paper.
Pour the mixture and cover with aluminum foil and close the lid.
Bake in preheated oven at 150C/355F for an hour, then take off the lid and leave to cook for another hour and a half up to two hours.
If you think that the top can over bake, you may cover with aluminum foil.
When it’s ready, is pricked with a skewer stick and smeared generously with melted butter.
Allow to cool and store in a dry metal box for a week.
