Ingredients for the cake are the following:
200 gr. Pitted dried dates;
30 gr. unsalted butter;
1 tsp baking soda;
240 ml. boiling water;
140 gr. Of brown sugar muscovado;
280 gr. Flour;
2 tsp baking powder;
1 1/2 tsp ground ready universal Christmas spice cinnamon nutmeg, allspice, ginger and coriander *;
pinch of salt;
115 gr. Chopped walnuts;
* You can use a little of all these spices, you have ready at hand.
Add the chopped dates, the butter and the baking soda into a saucepan. Pour the boiling water and stir until the butter melts completely. Leave aside to cool.
Preheat the oven to 180C/355F. Greased the baking form (18-20cm diameter) and cover with baking paper.
Beat the sugar and the eggs in a large bowl and add the cooled mixture with the dates.
Sift the flour with the salt and the spices, and the baking powder and add it to the mixture too.
At the end add the chopped walnuts and mix well.
Pour the mixture into the baking form and align with a spatula.
Bake for 1 – 1 1/4 hours until the cake rise and have nice brown color. You can check if it is ready with a toothpick stick.
Remove the cake from the mold and let it cool completely.
I have used decoration og 50% mascarpone and 50% sour cream with little of powdered sugar and lime zest.
The cake can last up to a week wrapped in a foil or box.
