Coconut-cauliflower cream soup

Really good soup for the cold winter days. Full of vitamins and fresh aroma!

Use it as a natural antibiotic for the flu and cold 🙂


1/2 cauliflower;
3-4 carrots;
7-8 field mushrooms;
2-3 scallions;
Sprig of basil;
1 tbsp grated ginger;
Spices if desired;
~1 cup milk;
~1 cup coconut cream;
5-6 tbsp coconut butter’
Black pepper;
Preparation is a piece of cake!

I put cauliflower and carrots to boil and while they were preparing, fried the mushrooms lightly with a little coconut oil /butter, with the onion, the grated ginger and the spices, while the juices and the smells mix all together.

Pour out the water from the cauliflower and the carrots and add the mushroom mixture.
Braise them in the pan for a few minutes.

Then add them into a blender/combine and mix them until you have velvet texture.

Heat the milk for a few minutes, do not leave it to boil!
And start to pour the milk into the blender, then add the coconut cream and mix again.

Add more salt if needed.
