For cake layers:
160 gr Sifted flour;
180 gr Sugar;
Handful of cookies “Oreo”
For the cream:
250 gr Pastry cream;
2/3 cup coconut;
250 gr Mascarpone;
1.5 cup cherries, raspberries or whatever you have on hand;
1/2 cup milk;
1/2 cup chocolate liqueur;
To prepare the cake layers, separate the egg yolks and the whites.Beat the egg whites to firm snow with a pinch of salt. Then beat egg yolks with the sugar until you get fine foam.
Gradually add the egg whites and stir with a wooden spoon.
Start adding the flour with the vanilla. Then bust the Oreo biscuits and stir gently.
Once all the ingredients are mixed, pour the mixture into the buttered pan and bake in a oven with a fan for 30-40 minutes at 170C/350F.
When the layers has cooled, cut in the middle to form to separate layers.
Whip the cream to stiff cream, add the mascarpone and the coconut chips and half of a cup of sour cherries with the cherries jiuce will color the cream.
Syrup the layer with milk and liquer, add the cream and place part of the cherries on top. Then place the second layer and repeat.
Decorate with fruits and almonds.
