Brownie with Oreo cookies and chocolate chips

Necessary products:

250 gr. Soft butter
7 tbsp white crystal sugar
10 tbsp Brown sugar
Vanilla extract 1 ampoules
1 ampoule essence rum
2 eggs
3 cups plus flour
1 tsp soda
1 tsp salt
1.5 cup chocolate chips
3-4 packets of Oreo cookies

Dough for the brownie layer:

6 tbsp cocoa powder
1/2 cup cooking oil
2 eggs
1 cup sugar
1 tsp vanilla extract
1/8 tsp salt
3/4 cup flour

Preparation:

Preheat the oven to 180C/350F and prepare a tray littered with baking paper. Beat the butter with the brown and white sugar.
Add the vanilla, the rum and the eggs and beat until they all are mixed well. Then add the salt and the baking soda. Add the flour (and leave a few spoons separately) and stir with a spatula until the ingredients have mixed well.

Then add the chocolate chips.

Spread the dough in the pan and arrange the Oreo cookies pressing lightly with your fingers so they can be in the dough, not on top of it.
In a separate bowl mix the cocoa, the oil and add the eggs, the sugar, the vanilla and the salt and mix them all together. At the end add the flour and stir well.

Pour the dough over to the cookies and spread out evenly.

Bake for around 40 minutes until the edges turn nice brown color.
Cool completely for 2 hours and cut into squares.
