I’m so happy to announce that Cake and Pancake is officially One year! Last year at the same time I started this place as something that I didn’t think can manage and didn’t believe that it will live for so long, but here we are!

1 cup butter at room temperature;
1 cup sugar;
1 1/2 cup flour;
4 tbsp cocoa;
1 tsp baking powder;
1/2 tsp salt;
4 big eggs;
2 tsp spasy paper;
1/2 cup chocolate chips;
Preparation of the muffins:
Preheat the oven to 175C/350F and prepare the paper form for the muffins.
Mix all the ingredients without the chocolate chips in a bowl. Gently add the chocolate chips and separate the mixture into the muffins cups for baking.
Bake for 20 minutes and leave them to cool onto a metal grid.
For the topping:
250 gr. Mascarpone;
200 gr. sour cream;
4-5 tbsp. powder sugar;
Preparation of the topping:
For the topping mix well all the ingredients and if it is not sweet enough, add some more sugar. You can paint it in a different color if you want with cooking paint.
Decorate with goji, walnuts, sugar decorations and coconut.
