The easiest cheesecake

I do not know anyone who does not like cheesecake, even in ancient Greece, Modern commercial American cream cheese was developed in 1872.


Regardless of the season, this dessert is always loved. Even thought it is extremely easy to prepare, using cottage cheese instead of mascarpone /for example / it suitable for people on a diet. No matter if you prefer fresh fruits /even some lemon/, honey or any jelly, nuts or chocolate you can not go wrong.

Cheesecake can be prepared with more than the two typical layers. Well known is that the bottom layer  often consists of a crust or base made from crushed cookies and the and thickest layer /mostly the main one/, is a mixture of soft, fresh cheese, eggs, and sugar. But not always 🙂 It can be baked or raw. In a different countries, this dessert is made with different cheese. In the USA and Canada – cream cheese, in Italy – ricotta, Germany and Poland – quark.

As I said, the one that I will present you is the most easiest cheesecake.
For it you’ll need:
For the main layer:

  • 0.88 lb yogurt;
  • 1.60 lb cottage cheese;
  • 6-7 tbsp honey;
  • 7-8 tbsp cherry jam;
  • a few leaves fresh mint;

For the bottom layer:

  • 1 package of cookies /some that you prefer/;
  • 5-6 tbsp soft butter;

Preparation:
Grind the cookies into small pieces and mix the with the soft butter into consistency of wet sand. Put the cookies in the shape for cake with falling walls and press into the bottom to form the layer of the cheesecake.

For the top layer mix the yogurt and the cottage cheese with the honey to homogenous mixture and pour it over the cookies. Leave it in the refrigerator for a few hours and pour the jelly on the top of the cheesecake before serving, decorate with the leaves of fresh mint
